Custom Beef that does not fit in our individual holding pens (Long Horns that won’t fit OR the size of the beef) will have an additional $70.00 Charge for special handeling added to their invoice.

Approximate Portions of a 350 lb. Side of Beef:
Up to 10 Chuck Roasts (bone in) or 5 (boneless) - 2 ½ lb. each
4 Arm Roast (bone-in ) 2 ½ lb. each
14-16 Delmonico or Rib Steaks - cut ¾ inch
6-8 Sirloin Steaks - cut ¾ inch
14-16 T-Bone & 2-4 Porterhouse Steaks - cut ¾ inch thick - Or New York Strip 14-16 steaks & Filets 10-14 steaks
2 Swiss Steak - 2 lb. each
2-3 Sirloin Tip Roast or 5-7 Sirloin Tip Steak
1 Flank Steak Approx. 1½ - 2 lb.
6-8 Round Steaks (5/8 inch) or 24-32 Minute Steaks (cubed steak)
100-120 lb. of Hamburger
3 Rump Roast (regular flat) or 2-3 Boned and Tied
1 Whole Brisket (trimmed approx. 6-8 lb. or Untrimmed 8-10 lb.)
